Easy Sweet Potato Casserole a Thanksgiving favorite at our house.

 
This dish is a HUGE hit in my house!  We didn't used to love the "yam" part of Thankgiving all that much until we tried it this way.  Now it rivals the stuffing as the favorite Thanksgiving food!  It's super easy too.

Preheat oven to 350*

Combine and pour sprayed 9 x 13 dish

3 cups canned, sweet potatoes (mashed)
1/4 cup melted butter
1 cup sugar
1/2 cup milk
1 tsp vanilla
3 eggs

Topping

1 cup brown sugar
1/2 cup flour
1 cup melted butter ( I use 1/2 cup)
1 cup chopped pecans

Sprinkle topping over sweet potato mixture.

Bake covered for 30 to 40 minutes.  Remove foil for last 10 or 15 minutes.

It's better the second day! You can make a day ahead and reheat it for your meal. I mix it up the night before Thanksgiving and cook it the next day.
